A Coogee Bay Road Restaurant, Rescued Overnight

Coogee Bay Road in Coogee NSW 2034 is one of the hardest-working hospitality strips on the Eastern beaches — a run of pubs, restaurants and cafes that feeds the beach crowd from breakfast until well past midnight. This is the story of one licensed restaurant on that strip, seating around 120 covers, that came to us in trouble: a tired venue, a stretched kitchen team doing their own cleaning at 1am, and a council inspection result that had rattled the owners. The trading name is anonymised at the operator's request; everything else is as it happened.

The situation we walked into

The walkthrough told a familiar beachside story. Front-of-house looked acceptable at dinner lighting but poor at 10am — salt film on the street glass, sand ground into the entry matting, sunscreen residue on banquette seating, and outdoor furniture dulled by a summer of spray and spilled schooners. Back-of-house was harder: grease had migrated behind the line equipment, kitchen floor grout had gone black, the coolroom door seals were overdue, and the bin room out the back was attracting exactly the pests you would expect. None of it was neglect by lazy people — it was a busy kitchen team trying to clean a commercial venue in the exhausted hour after close, without the equipment or the chemistry the job needs.

The program we built

  • Rescue phase: two overnight deep cleans — full kitchen degrease including behind and under equipment, machine scrub and re-whitening of floor grout, bin room washout and deodorise, and a complete front-of-house detail with glass de-salting
  • Nightly program: six nights a week, starting 11pm after the last covers — kitchen surfaces and floors, dining room reset, bathrooms, bar detail and touch-point disinfection with TGA-approved product
  • Beachside additions: street glass squeegeed every visit through summer, entry de-sanded nightly, outdoor furniture wiped and reset for the morning
  • Quarterly cycle: deep kitchen clean, seat and upholstery detail, and pressure wash of the rear laneway and bin area
  • Paperwork: visit logs and photographs the owners can show a council inspector, plus our certificate of currency for $20 million public liability

What changed

The measurable results arrived quickly. The next council inspection passed without a single cleaning-related note. The kitchen team got their hour back every night — the head chef stopped rostering a close-cleaner and put those wages into prep. Front-of-house presentation stopped depending on which staff member closed, because it no longer depended on staff at all. Six months in, the owners added the quarterly deep-clean cycle and moved their sister cafe two blocks away onto the same nightly run.

The quieter result is the one hospitality operators will recognise: the 5am handover. The baker arrives to a kitchen that smells of nothing, a floor that is dry and safe, and a dining room already set — every single morning, including the Sunday after a 300-cover Saturday.
